Get a bunch of woman together to discuss erotic novels and what do you get?  The formation of the Fantasy Guild and a well-planned poker party with 5 men and one eager to please waitress.  Each man has a clearly defined persona.  I loved how Sir taught one of the younger members of the group some improved technique.  Geoff masterfully coordinates the activities.  All in all, the men are rough but respectful, leaving Jasmine in a euphoric sex-filled fog.

Flourless Chocolate Cookies

I had to bake today.  It was just one of those days and I had to bake.  However, I’m living with a chocolate chip thief.  Once again, my stash of chocolate chips was gone.  Luckily I found this recipe that required very few ingredients, little effort, and more importantly didn’t require chocolate chips.  So when life swipes your chocolate chips, make these cookies.

Absolutely intense chocolate flavor.  Great for those that are gluten free.  And, only 5 ingredients: 2 1/4 c powered sugar; 1 c cocoa powder; pinch salt, 3 egg whites, & 2 tsp vanilla.  Bake on greased sheets at 350 for 8 min.

Need a feel-good book?  This is a shorter romance book that hooked me from the beginning.  It’s about a group in their mid to late twenties.  The story line kept moving forward.  Of course, the characters endure some bumps and bruises along the way in their relationships, but the author doesn’t string-out the reader for a hundred pages until that particular issue is resolved.  This makes it a perfect read after a stressful day.  Sometimes it is nice to have problems resolved quickly.

All the characters are real and relatable.  They are all very self sufficient, but their stubborn to a fault.  Their fears and challenges highlight typical issues of their age while easily keeping the reader’s attention.  I didn’t want to put the book down.

Macaroon Madness

No, I didn’t say March Madness.  This is not a post about NCAA basketball.  I may not be crazy about basketball, but I definitely can get behind the idea of macaroons.  I decided to bust out all my favorite macaroon recipes for a little comparison baking.

Pastel French Macarons

French Macarons (It is spelled with only one “o”).  This is a little variation I did to coincide with spring.  Most French macarons that I have seen have a similar color creme filling that matches the cookie part.  Instead, I decided to make a yellow cookie with a pale blue, green, and pink buttercream in each sandwich cookie.

White & Green Macaroons

This is a very basic macaroon.  Because it was St. Patrick’s Day, I dyed half the batch green.  These were outstanding the first day I baked them.  They seemed a little too moist the second day.

This was an older macaroon recipe that I adapted by adding 3/4 cup of melted chocolate.  These tasted okay the first day, but after they rested one day they were absolutely fabulous.  These were all eaten before the vanilla ones.

Bailey's Chocolate Macaroons

Bailey’s Chocolate Macaroon.  Like the standard macaroons it is spelled with 2 O’s.  The texture of the cookie portion reminds me of an italian cookie.  If you like Bailey’s and chocolate ganache, you’ll love the filling.

Baileys Chocolate Macaroons

Basic Macaroon Recipe: 

1 egg white, 1 c. sweetened condensed milk, 1 tsp vanilla extract, & 16 oz shredded coconut; Bake in preheated oven on parchment-lined cookie sheets at 325 for 15-20 minutes (until golden brown).  Allow to cool on pan for at least 10 minutes before removing.

Older Macaroon Recipe:

 3/4 sugar, 2 1/2 c shredded coconut, 2 large egg whites, 1 tsp vanilla, 3/4 c melted chocolate chips; Bake in preheated oven on parchment-lined cookie sheets at 350 for 15 minutes.  Allow to cool long enough that the macaroons can be removed by hand and not with a spatula.

Once you get acquainted with the biker-lingo, you won’t be able to put this series down.  It is incredibly hot how the male characters in this series can convey emotion and intent with so few words.  They say what they mean.  There are no head games or trying to read between the lines.  While it is done in a very bossy sort of way, it is also refreshing and provocative all at the same time.

Despite being curt with his words, Hopper Kincaid is great at manipulating situations.  He is able to cloak an invitation with a compliment while making it impossible to be refused.  The best part of Hop is that he is astute enough to see through Lanie’s issues in her head that she doesn’t even understand herself.  He may seem very rough on the outside, but how much thought he puts into Lanie’s feelings, it is obvious that he is actually very caring.  When Lanie doubts Hopper, Hopper responds, “Lady, I’m as real as it gets.”

Lanie is beautiful on the outside, but her road to becoming strong and healthy on the inside make her even more beautiful in the end.  I love how she finds strength even when she is almost paralyzed with doubt and fear.

By the way, the heat in this book is off the charts.  What a great read!

Opposites attract, right?  Well, Pax and Mila on the outside seem to be opposites.  Pax is the bad boy with lots of tattoos and Mila is a conservative small town girl.  It is the stuff on the outside that threatens to keep them apart.  Pax feels that he is not good enough for Mila.  Mila is hesitant because she fears that Pax will hurt her.  Pax promises,

“I will try very hard not to hurt you, … I’m fucked up.  So I can’t promise that I won’t.  But I promise that I will try.”

That is all that anyone can really promise.  Their attraction is actually based on their commonalities.  Despite difficulties that both suffered as children, the idea that “Love Never Fails” was a strong impression made upon both.

The love that grows between them is a beautiful connection, but is not without its painful moments and they must deal with some heartbreaking realities.  If you liked the Beautiful Series by Jamie McGuire, you should give this book a try.

Banoffe Pie – Pie Day 2015

And, it was the St. Patrick’s Day Parade in Chicago (when they dye the river green).

There was no other choice for dessert today, I had to make Banoffe pie.  When I originally found this recipe, I was looking for a good Irish dessert and I came upon this one.  For this post, I did a little further research and there seems to be a lot of conflicting information about whether or not this is an English or Irish dessert.  Either way, it tastes great!

Making the toffee filling:  I read a number of recipes on how to do this.  Some actually sound a little dangerous.  I opted for the easy and safe way.  I filled a pie pan with about 24 oz of sweetened condensed milked and mixed in a generous pinch of kosher salt.  I covered the pan with aluminum foil and put the pie pan in a roasting pan.  I added water to create a water bath.  I baked it at 400 for about 2 hours, occasionally replenishing the water bath.  Upon removing it from the oven, I transferred the cooked sweetened condensed milk to another bowl and placed it uncovered in the refrigerator for one hour.

I bet this filling would taste great in other desserts as well.  That’s something to consider for another day.
