Another Gluten Free Dessert!

I don’t make Rice Krispie Treats often, but whenever I do, I’m reminded of how delicious they are despite their simplicity. They’re not fancy, but they taste amazing!

The addition of 1 tsp. of Ube flavoring turns this dessert into something SENSATIONAL.

The added flavor is subtle, with notes of coconut and vanilla.

But the strong purple color is super fun and great for holidays like Valentine’s Day, Mardi Gras, Easter, and Halloween.

Unlike food coloring, the liquid Ube didn’t stain my hands.

Chocolate-dipped Blueberry Coconut Macaroons

It’s heart-shaped, purple, and chocolate-dipped …great for Valentine’s Day!

The blueberries gave this dessert its deep purple color, no artificial dye was needed.

Minimal ingredients are required and no baking is required.

Bigger the Better! Because size does matter

Chocolate chip cookies are the ultimate treat, blending gooey chocolate chunks with a buttery, crispy-chewy dough that delights everyone. Perfect fresh from the oven or from the cookie jar,
they’re the classic, comforting cookie that always satisfies! 🍪😋

Rice Krispie Ice Cream Sandwich

Chuck the regular cookie and use a rice krispie treat to make an ice cream sandwich. The marshmallow in the rice krispie blends well with the creamy ice cream, yet the krispie part doesn’t get soggy. Perfect Combo.

Note: I used Kellog’s red, white, and blue Rice Krispies and followed the recipe for Rice Krispie treats on the box. I also made homemade no-churn vanilla ice cream to complete the sandwich.
While homemade ice cream and rice krispsie treats are always preferred, store-bought work too.

Tips:
Cut the rice krispie treat to the size sandwich you want first
Freeze the rice krispie treats
Cut the rice krispie treat in half with a serated knife to make thinner
Allow ice cream to soften before smooshing in between rice krispie layers
Return to the freezer
